I’d never tried it before either, and I was surprised by this eye-opening way to use it.
The red part is the clip spacer.
Simply put, you use a clip spacer as a stopper to prevent the sushi from shifting or sliding down.
By doing so, the sushi itself won't go any further than that.
Just place the clip spacer at the bottom of the sheath and slip the sheath over it!
What's more, it means you can maintain the center of the hole!
I never would have thought of using it that way either!
I guess that's what they mean by "ingenuity."
